I think people assume that being a vegetarian is pretty boring and that meals revolve around pasta. Okay so this dish is pasta all on it's Jack Jones, but my god is it tasty and (almost) semi-nutritious. Great for cosy Sunday evenings if you don't fancy whipping together a full roast. I am in no way a food connoisseur and don't fantasise about cooking another meal but love when I stumble across a recipe that tantalises the taste buds.


  • 1 large onion
  • 1 clove of garlic
  • 5/6 sundried tomatoes
  • 1 tbsp of paprika
  • Handful of fresh basil
  • Olive oil
  • 1 can of chopped tomatoes
  • Spaghetti (or any pasta of your choosing)
  • Salt and pepper
  • Hard italian cheese
  • Garlic bread (optional)

  1. Chop all ingredients in preparation and boil kettle.
  2. Pour a decent amount of olive oil into a pan and heat on medium.
  3. Fry onion for 5 minutes. then add sundried tomato and cook for a further 2 minutes.
  4. Add garlic and cook for another minute before coating ingredients in paprika.
  5. Pour full tin of chopped tomatoes into pan and heat until bubbling. Reduce to a simmer and cook for 10 minutes.
  6. While the sauce is simmering, put on pasta and boil until al dente. See instructions on packaging for exact times.
  7. Once sauce has cooked for 10 minutes, stir through fresh basil and a pinch of salt and pepper then puree ingredients in a food processor or blender.
  8. Drain water off pasta and add sauce.
  9. Dish up, top with hard Italian cheese and a few basil leaves.
  10. DIG IN!
